Baked Broccoli Nuggets


1 large head broccoli
1/2 cup almond meal
1/2 cup shredded Parmesan cheese
2 cloves garlic, minced
1 egg, beaten
1/2 tsp onion powder
salt & pepper to taste

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

Cut broccoli into small florets and steam or cook. Then finely chop them (should be about 2 cups post chop). Using a paper towel, gently absorb any excess water by patting em down – do not mash.

Add all ingredients to a large bowl and combine. Form your nuggets and place them on the baking sheet. Bake for 20-25 minutes. Flick on the broiler at the end for a few minutes to give the tops a nice golden color.

Yields 12 nuggets – 3 servings.

Special Notes:

If you don’t have almond meal, just throw some raw almonds into your food processor and process them until they’re coarsely ground.
If being gluten free is not a priority to you, then you can use bread crumb instead of the almond meal
